I know I said I was going to try a carnitas recipe this week, but I didn’t get myself out to the store in time to buy the cut of meat it called for, so I pressed an easier button and made a Shrimp Cobb Salad from my ATK Quick Cookbook.
This was easy and yummy, although I left off the bleu cheese since no one here is really into cheeses that are a bit pungent.
And since Zoe is allergic to shrimp, I just put cubes of ham into her salad instead of the shrimp.
Anyway, I think this one will be in rotation especially during the summer months.

To switch things up, I’m going to try a side dish: proscuitto-wrapped asparagus.

I made an enormous amount of food following a recipe. It was Hainanese chicken. This is basically a chicken slowly cooked in a flavour filled base, The resulting stock is used to cook the rice that goes with it. We had four adult meals, four bowls of soup and now I have some very strong broth to freeze for later. If I make this again I will be very careful about the salt content. It is a gentle dish or can be spicy if you like. I also made a pasta sauce from sausages...so salty it was inedible.

I am making homemade from scratch black beans for tomorrow- from recipe that Ernest Hemingway supposedly liked, with hambone from Easter. I started the process today since I will be running around tomorrow. My usual is Mollie's Great Northern Bean Soup with cornbread when I have a hambone, but I thought I would try something a little different. I was going to make lentil soup, but when I pulled out my lentils I remembered that the package had been from my Mom's pantry and it has been 4 years since she died. I have learned the hard way (pun-lol) that even dried beans don't last forever- at some point they just stay hard no matter how long they are cooked. I think it will be served with rice and salad. and maybe bread. Thanks for inspiring me to cook more and try new things!

I am making up a recipe tonight - quiche, but made with cheddar instead of swiss, and going to add in sauteed onions and bell pepper. Also fixing zucchini in the skillet, some bacon on the side, and leftover vanilla wafer cake. No recipe for the quiche - just gonna wing it!

For Easter we tried Green Bean Bundles! It's basically 5-7 fresh green beans wrapped in bacon (take a pound and cut it in half, using 1 section per green bean bundle). Then you combine 1 C brown sugar w/ 1 stick of butter and drizzle that over the bundles (I thought it was overkill so I only used about half of the sauce). Sprinkle garlic powder and a pinch of salt and then bake in the oven. They were SO delicious. We also did Roasted Sweet Potatoes for the first time. Just dice the potatoes up and drizzle some EVOO followed by a little chili powder, garlic powder and onion powder.

I tried 2 new recipes this week. The first was for ATK's crispy smashed potatoes which I made as a side for Easter dinner. They were pretty good but need some tweaking. I will definitely try them again, though.
The second recipe was from Cooking Light magazine for chicken stroganoff. This was just OK but gets points for staying creamy (even as leftovers). I probably won't make it again though. I am not huge on mushrooms so I am not sure why I even tried it. Just looking for something different I guess.
