I looked through my fridge this morning and happily, I found nothing that needed to be thrown away! In fact, I have not one single leftover in my refrigerator at the moment. Yay! This is especially thrilling considering that my husband has not taken leftovers to work for two days in a row now(he went to lunch with someone yesterday and there was a work party today).
There were a couple of close calls…half a zucchini almost went into the compost, but I rescued it and used it in some muffins. I also had some stuffing that I really felt like just throwing away. Instead, I put it onto a baking sheet and broiled it, and it was actually very tasty that way.
On the whole, though, it was a pretty easy week. I feel much better when I haven’t had to rescue a bunch of nearly-rotten food…and when I plan well, shop well, and keep close tabs on my fridge, it’s not nearly so hard to keep from wasting food.

Yay! What great news - I'm so pleased for you and that's really well done, especially at this time of year. Good news on using up the courgette and stuffing too. Next time try stuffing the courgette and topping with grated cheese and then baking perhaps ;)
