Food Waste Friday-2.27

This week is a definite improvement over my dismal photo from last week…it’s just two slices of stromboli. I sent four of these to work with my husband, but then someone bought him lunch, and so these came back home with them. I ate two slices out of four, but by now I’m a little iffy on how safe they are to eat. And plus, they’re really dry at this point(the refrigerator makes bread dry out, but I certainly can’t keep stromboli out on the counter, since it has meat and cheese in it).

My fridge is mostly clear of leftovers at the moment, but I do have two challenges in front of me. There are two heads of romaine lettuce that will need to be used asap(there’s not much you can do with those aside from salads, so we’ll need to eat several of those in the next few days), and I have some leftover brown rice. I’m not really a huge fan of rice, and the stir-fry that went with the rice is gone, so I have nothing here to jazz it up. I ate some with brown sugar and milk the other morning, and it was ok that way, so I may do that again tomorrow morning(and maybe Sunday morning too. Note to self: cook less rice next time!). I’ll be happy when it’s all gone and I can eat oatmeal again, though.

I love a warm brown rice salad. I'm sure there are tons of recipes but I just throw in whatever greens I have, maybe some dried cranberries, maybe some apple, maybe some nuts, maybe some chicken and rice that is anywhere from room temperature to warm. A little bit of dressing and I have a great, healthy meal. i think I'm going to make one right now for lunch!

We don't eat much plain rice, so after ordering Chinese food a few weeks ago we had a lot leftover the next morning. I tossed it in a pan with some extra water (would have used apple juice, but didn't have any), some toasted almonds, apple chopped up very small, raisins, cinnamon, and a tiny dash of ginger. It fed a huge troop of family that was in town and got rave reviews - the trick seemed to be to add enough extra liquid to make everything soft.

We are not so good with leftover usage in my house, we are working on that. I do, however, adore brown rice! Cook some chicken breasts, warm up the brown rice, and pour some soy sauce over it. It's low maintenance, and so tasty. My tastes are simple, though, so you might not like the plain way of using it up. Fried Rice is great too, I just can't seem to get mine to taste right.

Great way to use leftover rice - Fried Rice! Just scramble a few eggs or cook up some diced meat and add to the rice along with some frozen mixed veggies and soy sauce. This is my favorite way to use up rice - I keep a bag in the freezer and just add the bits of leftover rice to it over time, then cook up a batch of fried rice when I have enough rice.

I love this simple but useful idea for saving small amounts of rice. I am so grateful that even though I've been cooking and baking for many years and trying to be conscientious, efficient and frugal, I can find even more great ideas from my blogging community of like minded people :)
