Have you noticed that something is conspicuously absent from my food waste photo today? None of my cilantro from last week is here!
I used a bunch of it in our salsa on Tuesday night, and then I used the rest to make some pesto for our paninis on Wednesday. I did have a couple of sprigs that got a little yellow, but I used all the rest of that big bunch. Woot!
So, my only waste this week was one lone orange. Somehow it got stuck under all the apples in my fruit drawer, and by the time I unearthed it, it was mushy and rotten on the one side. I may peel it and see if the other side is edible, but I’m kind of doubtful.

Jen, I put it in the food processor with garlic, lime juice, salt, and olive oil and blend it all up. You could make a bunch of it and freeze it to use later.
I use it in paninis mostly, but it's also good over pasta.

Did you know that cilantro can be frozen? I just tried it myself and it works really well...instructions here http://songbirdtiff.blogspot.com/2009/03/dinner-bell-they-might-be-giants.html
It's great that you were able to use it! I always have a hard time using up fresh herbs without freezing or drying them.

I have a question: How do you make pesto? I recently planted an herb garden on my back porch in strawberry planters and the cilantro is doing quite well- my hubby is not a huge fan, so I am the only one using it, a little at a time. I'd like something to do with the rest

I'm so glad you managed to work the cilantro surplus into your meals this week.
As with your orange, I had a similar issue with a grapefruit. I simply cut off the rotten part (really not so big) and then juiced the rest and it made for a tasty half-glass of juice. Before this challenge I would have just chucked it. Instead I enjoyed a refreshing pick-me-up.
I had another no waste week, but I'm growing weary of the constant leftovers for lunch and *still* having more than we can eat comfortably. I think I may alter our menu plan to have two nights of leftovers so we won't have such a surplus.
