Food Waste Photo-8.9


Sigh. I was so sure I’d have an no-waste week this week. What I have here is some tomato paste, and some ravioli with pink sauce. I actually love ravioli with pink sauce and was going to eat it shortly after I made it. But then I thought I might need it for my husband’s lunch after the weekend and so I waited. Unfortunately, I didn’t end up needing it for his lunch, and by the time I got around to eating it, it was too late.

The tomato paste is from quite a while ago. I was going to use it when I made some tomato sauce last week(it was fine then), but I forgot about it, and now it’s growing some hairy things. I’m assuming I could compost it because it’s just tomatoes and salt, after all.

Overall, though, it was a good food-wasting week. I managed again to not waste my cream(I put it into a smoothie and made some very tasty chocolate milk with it!). I modified my menu plan and made a stir-fry last night that used up a bunch of things from my fridge(a wrinkly red pepper, some green onions, a small zucchini, a mushroom, and some chicken broth). I also used up some extra milk by making chocolate pudding and used up a squash by making some cupcakes.

Still, I’d really like to have the experience of a no-waste week ONE of these times!

Here's the recipe for the cupcakes. http://www.tasteofhome.com/Recipes/Zucchini-Cupcakes They call for zucchini, but I used shredded yellow squash. This was the first time I'd tried them, and while they weren't anywhere near inedible, they also weren't my favorite. The caramel frosting just didn't seem to go with the citrus/spice flavor of the cupcakes, in my humble opinion. But, we ate all of them and I wasted no squash, so that's good.

I don't worry too hard about expiration dates either, especially on things like milk and eggs where the date is really a "sell-by" date. I cut out the bad parts of produce and cheese too. I'm more iffy about stuff like meats and pasta salads. I've had food poisoning before, and I'd rather throw out a small portion of food than have that again!

I think it's interesting to think about what people waste and don't waste. Expiration dates are pretty meaningless to me, which is good because I don't tend to clean the fridge often. :) I pretty much eat anything unless it's growing things it's not supposed to. And even still, I'll often just cut out the bad parts and keep eating it. :)

Do you have a recipe for the squash cupcakes?

Hi Kristen, Just getting back to this... because I went into labor on the 9th and had her at 5:05 am on the 10th! I'm pretty certain this is the happiest I've ever been in my life :)

We're in Oregon, so it hasn't been too hot, but there were a few days that were pretty miserable. I think it's supposed to be in the 90's the next few days, but now I have an excuse to stay inside where it's cooler.

Well, it's anything in my fridge that is inedible or can't be salvaged. I clean the fridge out on Thursdays of Fridays, so I locate all the waste then. Since I've been cleaning it every week, most stuff is just a week or two old.

I don't count stuff like vegetable trimmings, or small amounts of food that my kids have left on their plates. It's either groceries or leftovers that I've let go bad. Does that make sense?
