Grocery Spending and Menu Plan-Crazy Weekend Edition

Lately, an awful lot of side work has been coming my way…I’ve had weddings, funerals, and choirs to play for, and a number of photography jobs too. This is good, because it will help us in our recent effort to ramp up our emergency fund, but on the other hand, it’s making me awfully busy(and I was busy before!).

So, I gave myself a budget of $100($20 extra) this week…I’m making far more than $20 extra this week, and I thought it would be worth it to be able to buy a bit more in the way of convenience foods than usual.

I spent $49 at Aldi and $28.51 at Weis. In addition to that, I spent $16 at Safeway earlier in the week to buy some grapes($.99/pound) and beef chuck($1.69 a pound), plus a few other things. All told, I spent $93.31. Here’s a picture of what I bought(except for the Safeway purchases):

  • We’re having a picnic with some friends…I’m bringing buns, chips, and dessert.

Monday

  • Pulled Chicken Sandwiches
  • Homemade buns
  • Spinach Salad

Tuesday

  • Grilled London Broil
  • English Muffin bread
  • Applesauce

Wednesday

  • Chicken Fingers
  • Grapefruit
  • carrot sticks
  • garlic buns

Thursday

  • Seafood Subs
  • green salad

Friday

  • I have a wedding rehearsal, so the husband and kids are having Little Caesar’s pizza(which costs $5).

No spider? I mean, every week I come here hoping to see the spider and routinely I am disappointed. I don't know why I bother. ;)

I am trying to plan a picnic with the ladyfriend. Any ideas for a good yet frugal picnic?

I shredded a pork roast tonight and had pulled pork sandwiches with homemade cole slaw and it was delicious. I've just discovered the shredding technique and was amazed at how shredding seemed to make MORE food! Always a great post Kristin. Congrats on the extra work coming your way!

Congratulations on the extra income! It is wonderful that you are meeting your savings goals!

Isn't it lovely to enjoy the wonderful weather with a picnic? We've been eating out on our porch most nights and it is heaven. Cheers!

Kristin, I think I posted the English Muffin bread recipe here...I'll go and try to link it up.

I just grill some chicken breasts, shred them, add BBQ sauce, and serve it up on buns. Easy peasy.

Dana, we eat a fair number of them(sometimes with peanut butter on them) and we use a lot of them in fruit and yogurt smoothies, which the kids and I eat most days.

I did buy root beer...it just must not have made it into the picture! lol
