Yup, I actually have a picture this week!
On the left is some sauce from the Slow-Cooked Chicken with Wine and Cream. The recipe was sort of disappointing…it was all right, but nothing to write home about. Unfortunately, the recipe made too much sauce, and I don’t like it enough to want to finish it up.
The dry crumbs in the pan are from a recipe I made yesterday. It was a Cook’s Illustrated recipe for Oven-Fried Chicken, which I’d made before, so I knew it was good. The coating is supposed to be crushed Melba Toast, but I accidentally bought whole grain Melba Toast. I’m all for eating whole grains, but this Melba Toast was disgusting. Eating one was honestly not very different than eating sawdust. And not only were they REALLY dry, they also seemed to be harder than the regular Melba Toast, so hard that my food processor had turned part of them to dust while still leaving some in hard chunks.
I decided that if I used these crumbs on my chicken, I’d end up wasting not only the crumbs but the chicken too! So, I crushed some Ritz crackers and use those instead, with very satisfactory results.
Since the Melba Toast was crushed up so finely, I just sprinkled it out into my backyard instead of throwing it in the trash. It was quite dirt-like in consistency, after all, so I think it will become one with the dirt out there with nary a problem. The leftover sauce, however, is going to have to hit the trash.
