Zucchini Bread

I know there are a bazillion recipes out there for zucchini bread, but I thought I’d add mine to the mix. Happily, this is a very simple recipe…mix dry ingredients, wet ingredients, combine, and bake.

– Zucchini – All-purpose flour – Baking soda – Baking powder – Ground cinnamon – Ground allspice – Salt – Sugar

Instructions

First, shred a pound of unpeeled zucchini.

Step: 1

To rid the zucchini of its excess liquid, wrap it in a tea towel and squeeze until you can release no more juice.

Step: 3

Mix the dry ingredients together in a bowl.

Step: 4

And mix the wet ingredients together. I like to use my handy-dandy egg beaters for this.
